DaSIII doesn't exactly retcons DaSII's story because there isn't much to be retconned, considering II is more of a side story than anything else and has no relevance to the events of I or III, it just serves to expand the setting.
At most, the only aspects in which II and III are in active conflict are that the Old Iron King couldn't possibly have a hold of the Old King Soul, and the whole mess involving the Old Dragonslayer and Ornstein.
Also it sas that Vendrick was absolutely obsessed with souls, which depending on how you look at it might not even be a retcon at all.
