Because action games build to a final climax much like action movies do the same, where the protagonist generally fights a final boss or enemy of some kind.

The people that whine about how all boss fights are boring shit are usually casuals that only play cinematic garbage (ie journalists, neofags, reddit).

Boss battles are good.
But a little variation would be better. What if the player is the boss and the final battle pits you against a lot of enemies, instead of one superpowered enemy.
Also, a lot of action movies have a boss fight. Lots of stories, in general, have a great fight against a final, supreme opponent. An ultimate challenge for the hero to overcome.

if your game is built around combat, then yes you usually need it
usually in other genres like racing or puzzles you dont get a final boss tho, same goes for a few action games here and there, depends on the plot and ending you wanna make

I liked Wind Waker's a lot more, or at least the final FINAL part of it since the combat feels more fast paced and the arena with Hyrule Flooding is fucking cool as opposed to just Hyrule field with some magic barriers, plus, TP Ganon is piss easy. but the music is fucking great.

Play more AAA shit OP. Here's a couple: How about that final boss in Uncharted 3 (fighting regular enemies) or 4 (QTE sword fight!). The final bosses in Call of Duty games are pretty cool, except they never existed. How about that final boss in Bioshock Infinite, because defending a power core from a bunch of enemies sure is a final boss.

It provides the gameplay with a climax to match the plot. Cinematic FPSes like Battlefield and CoD don't have bosses, and their endings are massive anticlimaxes because of it.

The only reason that I can see is so that the story has a bitter sweet ending rather than a pleasant one where the people in the twilight realm go back to Hyrule and coexist peacefully or something like that.
Literally the only reason was, like so many other parts of the game, to brute force a "dark" tone to the game where it didn't fit. Much like the nightmare sequence with Ilia.

Final boss battles are a problematic trope because they cause ludonarrative dissonance and disconnect the player from the game emotionally. Boss characters are also often white males which reinforces misogynistic stereotypes and racist ethnocentric systems of power. Many progressive indie titles have done away with this archaic and gamey feature in favor of more richly crafted narrative endings such as the protagonist having a conversation with her rivals in order to find an equitable outcome to the conflict.
It would be like playing Rage all over again.

How do you actually do a final boss that is a humanoid in a realistic setting?
In sci-fi or fantasy you could do crazy shit and make it interesting, but if your main antagonist is a human how do you design a fight where you don't just shoot him in the face?
The closest example I can think of that isn't completely terrible is MW1 and MW2, but they contain some elements of QTE still.

Only problem with that is if the big baddie still needs to be killed.
I think Watch Dogs 1 did this. The last mission was insanely hard and it was intended that the city was the boss, but when you reached the bad guy it was pretty much a QTE to clean him up. Probably better the other way around.
Worked for MGS1 to 4. Although I guess MGS hardly counts as "realistic."

It's easy, and for western devs who just aspire to make cinematic games, animating some cool action sequence makes for a compelling game, in their mind.
