Do the MMO Final Fantasies actually contain a significant enough story I shouldn't miss if I'm playing through all of the numbered FFs, or can I safely skip them?

Yes. FFXI is easily one of the best storylines in the series, and it's all soloable now thanks to the game changes in the past few years. FFXIV's storyline has its ups and downs, but has been pretty good the latest expansion.

All of the games are in their own timelines except obviously for the spinoffs of a number (X-2 XIII-2 etc). The MMO games are the same way.
You could just play 15 and it not matter because they're not in the same timeline Note that they are in the same timeline but mostly in the same universe, Ivalice. The only things that you will miss out from not playing previous games is things that persist throughout every timeline. (Cid is a mechanic, chocobo racing is customary, there's a secret in every corner, universe lore like what spells there are and about all the monsters)

I'd suggest playing other ones regardless because they're all good games. 14 is the only one I actually hate but that's because I'm an 11 nostalgia fag who thinks it's literally the greatest game ever released as it's my favorite one.

See: FFXI's story is absolutely amazing in my opinion. Just be prepared for long cutscenes (I never really minded them for some reason) and reading since there's no voices for the dialogue since it's a 2002 MMO. There's so much to it with the expansions and shit and it's all very interesting, at least to me. FF14 I can't really attest for since I didn't play it too much but I doubt it's of the same caliber.
Also you worded your post as if you wanted to know if you had to play them in sequence for the story..
