It's a boring, overrated series. Even in Japan it wasn't popular. In fact, I have a suspicion it's only liked so much in the West because of nostalgia.
I have no nostalgia for it, I watched it for the first time last year. I think it's an amazing series that does pretty much everything right. I don't see how it could be considered boring.

In Japan, barely any of the episodes aired because of a knife attack at a school got a wild hare up censorship's ass.
I just got bored throughout it. None of the episodes really stood out. Ed was my favourite character, I guess.
The action isn't particularly good, the story is too episodic to be interesting, none of the characters have any really interesting arcs (Spike's is basically just MUH LOVE INTEREST), and the setting is in space but nothing interesting happens?

See I don't get this. My issue with the series is that certain episodes stand out greatly, like Ballad of Fallen Angels, but most of it feels run-of-the-mill and even childish.

I guess this is what it mostly boils down to. I loved the episodic nature, every episode was something completely different. The "main plot" with Spike, Vicious and Julia isn't really any more interesting than most of the episodic stories and I guess that might be considered a fault, but in my mind nothing was more important than anything else, it was always more about the adventures of the Bebop's crew rather than just resolving Spike's personal story. I suppose if one can't get into that mindset and considers the episodic stuff to be filler, he won't enjoy the series much.

Cowboy Bebop was one of the absolute worst/best anime series I ever watched. Anyone that tells you over half the series wasn't worthless filler is lying.
The later/final episodes are what make people appreciate the series. Which is why [adult swim] eventually started airing them randomly.
The series was a massive stand out back in 1999, when compared to garbage like Tenchi Muyo, but people went overboard on how good it actually is. Then continued to for decades.

The ship is a household, the crew is a family. The story is about a family in the star system.
Anyone who says "Ed is the biggest problem with the show" is sort of missing the point. The story episodes were actually the weakest episodes.

I agree about the Emilia thing, but if you read the backstory about Subaru's life before travelling to the other world, it makes sense.
Basically, he was completely bored and had no purpose in his life before being transported. And Emilia saving him, letting him repay her, and just being a girl for him to love, was her way of giving him purpose. That purpose is why he's so smitten with her.

Non Non Biyori is the only CGDCT anime in that list, and that's a rare exception because I normally hate CGDCT anime like K-ON. Non Non Biyori is a rare gem though.
