The thing is: you never select items in your inventory when you use them to interact with the environment. Only recovery items are used in the menu.
It doesn't matter in which order you bring the items, you can run while carrying the nitro (just not jump) and it's not nearly as hard as he makes it out to be and it's actually one of my favourite N64 games. Without any nostalgia goggles, I bought it a couple of years ago.
