Zelda just seems to be between the generic open world games that are made nowadays and Gothic. It's a step in the right direction and might force developers to copy it and get closer to a game that is at least close to the quality of Gothic.

That means there's an actual open world for you to explore and the loot is worth it. Also, Morrowind has an actual reputation system. Zelda has nothing like that, just your typical "thank you, hero".

Hard to say. The physics and weather simulations are pretty incredible with how much they offer gameplay-wise, but I am unsure whether it has truly usurped Morrowind due to how much more actual content the latter has and all the roleplaying features. BotW obviously isn't trying to be an RPG so it feels unfair to judge it based on something like that, but it makes sense to me to judge an open world by the content that fills it out; whether that content and the way you interact with it truly justifies making an open world of a given size in the first place. In that regard Morrowind is still king as far as I can tell, but it's too early to say with certainty since I'll be replaying BotW for a while and seeing what else it has to offer.

Also, modded Morrowind actually looks better than BotW.

Also, in Morrowind you can kill EVERYONE, even "gods" like Vivec and Almalexia. You can also steal from people, bribe, make them attack you so you legally can kill them. That is an open world, not that baby shit zelda is.

The thing that really set Gothic apart was how well it worked within it's limitations to craft a believable world. For example, in most RPGs towns are very small compared to the real world and we have to suspend our disbelief, but in Gothic there's a good reason why the settlements are so small. There's a reason why there are so few people and no children. There's a reason why the surrounding landscape is full of terrible beasts. And there's even a reason why the player is confined within the bounds of the map. That to me was Gothic's X-factor, how little you needed to suspend your disbelief to become immersed in it's world.
Gothic II ruined all that. Khorinis is of similar size to The Old Camp despite being a real city, with a real poppulion. The local militia have done nothing about the monsters literally within a hundred feet of the city. And the land is now surrounded on three sides by an invisible barrier with no precedent. It feels like a generic video game world by comparison.
If you prefer Gothic II and have ever told someone to skip the first game, you are cancer.

Zelda is the only non-RPG that plays like an RPG (except for Zelda clones). They just do this because their fanbase is to casual to play an actual RPG.
They do this because there's a lot of RPG elements that aren't fun and are just carry overs from D&D. Like having dice roll based combat for instance.

Dark Souls doesn't have an open world and I would argue that while it's nicely looking it can't really compete with Gothic's world, which seems very believable, alive and naturally grown. Dark Souls is more of a backdrop scenery, which has some nicely looking places, but ultimately doesn't seem like a place that was ever inhabited at all.
