I scanned SSB Link while still in the Great Plateau and didn't see Epona. I got items and a chest. Am I fucked? I guess if she did spawn there'd be no way to get her down from there anyway.

Ah sorry. Well OP says SSB Link (yellow bar) was TP armor so I thought it was the only way to get that. As for OoT Link my issue is more it's adult Link. Somehow I personally enjoy Child Link with regarding OoT over Adult.

So the only ones with actual lock out shit is Wolf Link (Wolf Link companion) , OoT Link (OoT Tunic), WW Link and Zelda (WW gear), and SSB line (Link for Epona, Zelda/Shiek for Shiek gear maybe, and Ganondorf for special sword). Fucking hell with this.

The memory quests give you story, I dunno if they give anything but I collected them all. After you liberate every divine beast you go fight Ganon, but you don't need to liberate any of them, but if you do liberate them all Ganon's health is halved.
Guess the issue is them wondering what should be part of the game and what shouldn't. Guess to them the fan service of the older game clothes is enough. The real issue will be the 3rd party ones and Pokemon. Since stuff like Mega Man need Nintendo to talk to Capcom and they will have to go into detail what the amiibo will real do in the game. Pokemon is a different beast all together because while Nintendo has a major ownership of Pokemon TPC is notorious for putting their foot down to Nintendo on what they can and can't do with Pokemon.
