they could go gullivers travels on you for a sidequest, tie you up, take your weapons, you have to whistle for your horse to come and nibble at the ropes to free you

the soldier's armor has the best defense you can get this early.
In fact the only armor piece that has better defense is the champions tunic, but it's just that one piece and not a set.
end game you can find armors with the same defense as the soldier's armor but with unique bonuses to make them ultimately better. the ancient set is the best in the game in terms of defense and offensive capabilities.

How much heat resistance do I need to not spontaneously combust at Death Mountain? I have 3 pieces of heat resistant clothes on and a frostblade strapped to my back and it all does nothing.

For a game that's provided a ton of choice everywhere else, this seems like poor design to basically force you to buy elixirs from this one random lady to access an entire portion of the map.
Flameproof Lizards, Beedle will sell them from time to time (not sure if his inventory is stable specific though).
You can get Flameproof armour in Goron City then (also a kid Goron who sells Fireproof elixirs if ya need more).

I found my first Bear in Hickalay forest going there to beat up a Stalnox. They are probably rare because they drop 3 Gourmet meats.

there are fireproof lizards all around the base and summit of death mountain, inside and outside the lava areas so you can just brew your own fireproof elixirs before you go up there

Beedle's inventory is always geared for the region you find him in, so yeah, his shit would be good if you buy from him near Death Mountain.

There's an armor set you can get once you get to the Goron city. You could also force your way there by healing repeatedly.
Death Mountain and Zora's Domain are both pretty linear
