Preferably where my only choice to get materials and food is through barter or simply going out and gathering them myself? I'd like the game more if didn't feature any modern technology in the game world. I'm getting sick of my surroundings in the big city and just want to experience what living in The Bush is really like - extreme conditions and hardship alike.

Stardew Valley is pretty much this escapist rural fantasy you're describing. It doesn't really have a lot of challenge or hardships, nor is it maybe as primitive and isolated as you want. But it's comfy as fuck and all about getting away from the city life.
