Which one would you recommend?

If you are only interested in playing the campaign co-op, I would go for Open Coop.

While LMS also has this, open coop felt a bit more stable with less glitches and more balanced gameplay.

In open coop you share a health pool with your teammates.
Picking up health while your health is maxed out puts it in the health pool.
The health pool is used respawning.
If your health pool is dry nobody can respawn, I always liked that idea.

LMS is great for additional game modes
It has a lot of horde mode maps and is more about casual fun.
It also includes the coop mode for the Classic Doom mod (which you should check out if you never did)
It also has a kickass soundtrack.

Doom 4 did their portrayal better and made them actually look beefy and large, but Doom 3 has the better design.

Me and my girlfriend had an argument about rape. She claimed that rape is nothing big and if you're strong minded you can just get over it. Practically told me rape victims just over exaggerate. Love how they integrated the Doom 3 and classic Doom designs in nuDoom. Imps were kind of weird though.

The imps looked too tryhard in new DOOM. Grr glowing eyes ANGERY. E3 version Imp looked better, although admittedly they were like smaller and skinnier hell knights.

I liked the look of the Barons of Hell and the final boss looked great

The spider was done well for sure. Although there was something off about the baron's face to me

It's good there are secrets, and I get that Ultra Nightmare is for experts who already know where the secrets are, but they're also tied to upgrades and I'm a stubborn retard.
