The Nameless King and Gwyndolin are both Gods. However, the Fire, due to a certain metaphysical quality of Lordran dealing with disparity, requires Humanity to feed on. Undead and Humans are the only beings that produce Humanity - undead produce a lot more humanity than normal humans.
It's possible that Gwyn gave up the last of his Lord Soul to become what he was before he gained the Light Soul. He had already split the Light Soul between a few of his subordinates. That's just conjecture on my part, however.

Don't bother trying to figure out the lore, so much content was cut from the game that they probably lost any semblance of continuity, like Andre being Gwyn's son or Oscar being your rival. I think the game tried to put a lot of emphasis on duality since regardless of what you do the age of fire goes on anyway because a different undead will light the flame if you don't.

Silver Knights turned into the Black Knights after they attempted to get rid of the Bed of Chaos, but failed, which burnt their silver armor black and warped it to have horns. The Black Knights returned and defended the kingdom from hollows and undead, but eventually hollowed themselves. They are basically Gwyndolin's equivalent of green army men.

The ringed city is Londor, we see the Sable Church and a pilgrim. The question is, is it ONLY Londor or are there multiple cities and things collapsing on themselves like in the rest of the world. And where is it located (even tho distance doesn't make any sense and distant lands are teleporting and mixing themselves around lothric's castle) compared to Lothric, the intro makes it sound like the pilgrims traveled a long ass time. It can be New Londo collpasing on itself and pulling stuff to it since Yuria and Yoel are friends with Kaathe and Kaathe was near the four kings.
In the 16mn gameplay video, we get an item on something that looks 99.99999% like the beginning area of Lothric's High wall.

Oscar had a different role originally, surviving to the end and then fighting the chosen undead in opposition of EITHER ending they chose. That is gathered from datamined unused voice lines, and is obvious enough to not be open to interpretation.
In the actual game, he is investigating the Undead Asylum for his quest. The assumption is that he aims to free every Undead there in order to aid a potential Chosen Undead, since his quest is simply that: to fulfill the prophecy. Presumably, he gets caught strolling around the roof by Asylum Demon and gets fuked before he could free even more undead. Note that Asylum Demon jumps in from the ceiling when you first encounter it.
As for why he doesn't respawn, it has to do with how the curse of Undead works. You can either die too often and turn hollow, or you have such a weak soul that you didn't last a single death in the first place. Or, you could lose your will to carry on, or lose sight/accomplish your goal, and turn hollow.
Any of those could have applied to him. The player character is only special because he has some unknown endless driving force (the player) forcing him to bash his rotting body against bosses over and over until he clears the game. Any other equally autistic and driven undead could have ended up the Chosen Undead, since its part of the curse that they never die so long as they remain motivated. Oscar wasn't.

Same thing here. There are no records left in "modern" dark souls times, probably because they haven't invented writing and there wasn't much for Gwyn to write home about in the first place, other than how much he hated dragons. You will just have to deal with it that everything concrete is lost as myths and legends, like where the fuck Troy actually is, or who "sea people" actually are.
