"Saber" is a class of characters, namely sword-wielders, and so you'll run into a bunch of different people named "Saber".

As for why there are so many original blue Saber knock-offs, it's because the fanbase is retarded and will keep buying stuff if Saber shows up again. Even if it is a different Saber. Even if they are unrelated.

In the case of red Saber, it's a bit of a bait-and-switch. The original Fate/Extra features a red clothing Saber that looked like the original, to make people think they would get to play a game with Saber alongside them. Of course, it turned out to be a completely different person.

Fate: Extra is another universe but is full of fanservice of fsn characters. Extella is the sequel.

If you want more Nasuverse you can read Tsukihime and watch Kara no Kyokai movies, they don´t spoil Fate so you can watch these whenever you want.

"Blue Saber", or the original Saber, is King Arthur. "Red Saber", or the main character in Fate/Extra and Fate/Extella, is Nero Caesar of Rome. Fate/Extra is basically completely different from the "standard" Fate series, outside having the same idea.
