I don't think we know too much about how the game is structured. Last I heard the space station is constant but enemy and hazard locations are random, and you only have an EMP gun which stuns but doesn't kill. So you have to do whatever the game requires while avoiding enemies and surviving.

You can take damage, you just can't be killed unless you're beheaded. Highlanders have been shown needing to recuperate after fights. Solution, healthbar that when it depletes leads to Resident Evil 4 style death scenarios.

No footage exists, but both were prototyped. Troika had two plans post Vampire: Bloodines:
1) Spiritual successor to Fallout
2) Sequel to Arcanum
The former hit a bunch of walls with publishers, but they hoped to revive it when the Fallout license went up for sale, putting in their own bid in an effort to see the franchise return to its creators. Zenimax/Bethesda put in a bid that a small independent studio like Troika couldn't possible match, and that was the end of that.
Journey to the Centre of Arcanum was a handful of mixed prototypes, but intended to combine tech developed during Bloodlines with Arcanum game systems for a hybrid system in a version of the world set post Arcanum. Tim Cain in particular considers Arcanum his baby, and was super enthusiastic about continuing the universe.
Unfortunately both Valve and Activision double teamed Troika into bankruptcy oblivion with the clusterfuck Bloodlines development, and that was the end of that. Their swansong was working unpaid hours while the studio was being pulled apart to develop patches fixing game breaking Bloodline bugs that only existed because they were forced to release an unfinished game.
