The chosen Undead will constantly respawn and adapt to whatever tactics Doom guy would use and eventually defeat him. He can go for all of eternity if he has to.

Is it ever stated that the CU is immortal and respawns? I always thought that was just a game mechanic. All the other undead NPCs like Crestfallen Knight, Griggs, Laurentius etc. die permanently and they have the same darksign so it makes no sense for you to be special in that regard.

NPCs dying permanently has spawned a lot of speculation, and the theory I'm most fond of is that hollows revert to immotile pygmies after excessive trauma and losing all of their souls and humanity. Either way, respawning is 100% canonical

It's stated. The theme of repeating cycles and never ending struggles is pretty heavily ham fisted into each one.
