Unironically Dark Souls 1 when it first came out.
There was so much to learn about the world and it was genuinely fun reading through the items and wiki's for lore after my first playthrough.

It's got multiple layers. There's the "in-game" lore of The World itself, which is really cool to read about and discover, plus the "real" lore of the actual world that it takes place in, and all the mystery and intrigue of the .hack universe is like nothing I've ever seen elsewhere
I liked Metal gear's story if you can call it lore.
Legacy of Kain and Ive yet to find another game series with writing as good as it.

I don't like a lot of the focus of it, but TES has so much lore that I think it's sort of impressive and a lot of it is pretty cool.
Unironically, Dark Souls if you don't try and look too deep into the lore. There's a point where you should stop looking for explanation and meaning.
I also want to say Zelda has some cool basic lore (though that's probably thanks to a bit of nostalgia) that could be really interesting and great if they fleshed it out and did more interesting and ballsy stuff with it.
And of course, Mass Effect originally had a great universe and lore, but it was squandered.
Without a doubt, the Elder Scroll series, although ESO kind of fuck that up for it. Star Wars also comes into mind with SWG and KotoR 1 and 2, but Disney kill that.
Guild Wars had some deep lore going for it, but the company change when Guild Wars 2 happen and trannie faggots and fat women ruin it with their retarded fanfiction-tier story and lore. Man, Guild Wars could of have a great lore dedicated to the Aztec of all culture.
LoK's beauty is less about the lore and moreso the heavily-verbose language itself they use to describe fucking everything.
Also Tony Jay had godlike voice-acting no pun intended..

All the Souls games have pretty interesting worlds. Demon's Souls is one of my favorites.
I haven't played them in a while but GOG has them all so at least those versions should work on modern systems.
Play them in whatever order you like desu but release order is probably the way to go.

you just posted it, I don't think anything has surpassed Morrowind. It's a shame, the best elements which make it so great, the religious, occult and spiritual were attached by some faggot stoner as affectations and it makes me wonder what might be achieved in the medium given competent direction. Morrowind was lightning in a bottle and kirkbride is too fucking stupid to recapture it, and even if he did the industry no longer has demand for substantive ideas
