I promise you they were there up until the battle starts. It doesn't matter if I defend or attack, my other troops just disappear.

I feel you. I'm a EU4 veteran, but the few times I tried to play Crusader Kings, I got lost in the mechanics.
I guess this is the sort of game you have to pick up early, when its more empty, and slowly over time get used to new mechanics as they are added with DLC and patches.
I am overwhelmed playing with all that shit now, never having played before.

The optimal way to play is Deus Vulting and Allahu Ackbaring. If you're playing a nation that can't Deus vult or Allahu ackbar then you're playing wrong.

Click your character portrait. Go to the Pacts tab at the bottom. If you married the right person and they like you enough their should be a button that allows you to call them to arms. However if you haven't been sending them gifts or your Chancellor to improve your relations, your distance or how much they like your enemy will prevent them from helping you.

Don't bother calling Byzantium. They probably won't come and the farther away an ally is from you the pissier they get about having to help you.
