Super Metroid is my favourite game.
Picked this up on steam recently and i've been having a blast with it, the only game I can think of where it actually is as good as it was when I was a kid.
Hopefully microsoft make JSRF backwards compatible at some point

All of it. 60FPS standard is in tact. The physics (despite not being "realistic") are fantastic. The world design is great and combined with the physics allows a skilled player to go literally wherever if they know the enemies and mechanics well enough. And yes, the music sets the tone well.
Just about everything, and the way it all fits together. The music complements the atmosphere, the atmosphere enriches the exploration, the exploration is so engaging because of the platforming mechanics, the platforming mechanics are what makes the sequence breaking so exciting, the sequence breaking is what makes it so replayable.
I never get bored of Super, no matter how much I play it. There's always something new for me to try.

You're a faggot if you want to change the physics. I am a fan of the Control Freak patches which alters the inputs to be more like the GBA games.
SNES games did run at 60fps, they experienced slowdown rather than framedrops.

I picked up recently, and so far I'm liking it, but there are times when it felt you needed to spam your bombs to find a place where you need to get through. Thankfully not holy water Castlevania 2 tier, but still kind of counter intuitive.
