Game canon does not apply. In the game you are supposed to win and you are pretty much geralt. So it's basically cheating at this point.
In the books geralt is pretty smart and capable but get's easily outplayed by Vilgevortz and gets killed by a peasant. He is strong but clearly not the strongest and certainly not immortal or unkillable.

A regular Witcher isn't particularly strong and Bonhart proves that a regular human can be as good of a fighter as a Witcher. Most Witchers are expected to die from a monster, which makes most monsters somewhat on a level with a Witcher. It is confirmed that many Witchers decline contracts if they feel they're too risky, especially if they aren't already broke that week.
Geralt is the top Witcher, but it's not like he no-damages every contract. On multiple occasions he got badly injured during a fight, even with regular monsters. He definitely won't kill a dragon or a higher vampire.
Mages completely shit on Witchers, in fact they shit on pretty much everything.
Gaunter is literally GOD, Ciri doesnt come close.

Quite honestly, the way he plays in games is suicidal. Realistically, he couldn't get away with saying "yes" to every job he comes across. Even though he's a mutant with enhanced reflexes, strength, and an array of versatile signs powers, the amount of trouble he stirs with people should lead to constant assassination attempts and many of the monsters and apparitions he fights are seriously dangerous, even for a witcher.
tl;dr: I imagine a real life Geralt being a tad more low-key and emphasizing the whole witcher "neutrality" thing, whereas in game he's a hero who fights endlessly and brazenly upsets political types without a care in the world.

Gaunter can't do shit without a contract though. He's bound by myriads of ancient mystical rules. Doesn't really matter how strong you are if you can never use more than a tiny portion of your powers.

There is a part in the book where he tries to find ciri. It's exactly before he fights vilgefortz and loses. He kills like 50 soldiers in matter of seconds. He can be pretty OP in the book.

And where exactly does he say that? Him not being able to find her for plot reasons is something completely different. This nigga literally transports you to different worlds, is clearly immortal, can teleport around as seen in the backgrounds of many scenes, can stop time and probably make people burst if he wishes it so.

Their prime advantage is that so long as they can walk away from an encounter, they'll be back on their feet in a matter of days.
Have you even read the books? Geralt and the main cast act and more importantly INTERACT almost completely different in the games than they do in the books and its for the better in every single way. The dialogue in the books is dry as fuck dude.
