It's harder to write the randomness that's in the game standalone now that people magically piece together than it would be to just make a story and then remove some crucial plot details

The nature of Dark Souls is that it doesn't waste your time with anything you don't want to do. You can completely ignore pretty much all plot and even skip several areas.

They were obviously trying to sell a story. They even said how they put story elements into the descriptions of items because they were influenced by wrpgs
