I like stuff like this in games. You can presume some vast backstory from it. Clearly FF7 isn't set on Earth, but they know some tidbits about it. Perhaps it's a colony world, and its been thousands of years since they setup, and people have practically forgotten Earth exists

FFX-2 implies a connection with 7. Also Dirge of Cerberus sort of does too, it has a cutscene that says his new airship was excavated in some ruins and it was alien technology. It's up to you if you want to believe they're canon though.

My headcanon is that an Al Bhed space expedition landed on Gaia and had relations with the native Cetra.
FFVII says that the Cetra were a nomadic people in tune with the Planet but some of them eventually settled into cities and stopped hearing the "planet's voice" and that this new group were the ancestors of modern day FF7 humans.
The Al Bhed brought technology to the Cetra of Gaia and intermarried with them giving rise to the human race. The humans multiplied rapidly whilst the Cetra's numbers dwindled. At this point Gaia is basically our modern day Earth. Non stop conflict and warfare angered the planet causing it to produce the WEAPONS. The WEAPONS laid waste to human civilization and caused massive shifts in geography after which they went back to sleep.
The history of the old world is mostly forgotten save for uncovered relics. Vehicles, Computers, Fashion, Architecture, writing systems, etc. these relics from the old world would be the foundation of the New world.
This is why FF7's world feels post-post apocalyptic.
