Original Ganon was a pig.
Ganondorf is simply his mortal, Gerudo body. It was born a few years before OoT, it was killed in both Twilight Princess and Wind Waker and it was corrupted beyond repair in the downfall timeline by his alter-ego. Ganon is his spirit, that is able to live on almost indefinitely and that's why it is able to keep returning.
