Sometimes I wonder if the writing in the series is a desperate cry of help from Kojima because he doesn't want people to think that they games are well written.
While not the best stealth games, it does manage to do its combat and action setpieces better than every other stealth game, intentional or not Thief's combat is atrocious.

mgsv has some pretty refined mechanics, but punch for punch everything before that wasn't really that great gameplay

In terms of mechanics and gameplay it's not something super special, it's the distinctive characters and writing that makes it what it is.
What made MGS big in the first place was how close it was to being a theatrical hollywood hollywood experience at the time, it just happened to also be a stealth game.
