The game mostly uses a 3rd person narrative. Dialogue choices are more like instructions for your character to follow. I don't know why the writers thought to do it this way but the must have their reasons.

It makes no sense to adapt that style in a limited choice dialogue at all. Its more suited for dialogues where you type out your answer (see lapis philosophorum for c64).

I've been playing tabletop RPGs for twenty years and I've never encountered anyone who doesn't act out dialogue directly.
Is it confirmed that they use the same slang we use? Do the npcs know about memes?

I actually don't have a problem with that, I wouldn't say it's good, but it's not bad. It's just another way of writing the dialogue that allows the player to insert the exact tone of what they'd want their specific way of saying "Yes." to be like using their imagination.
Of course, this means actual nuance in the writing won't actually get into the story, but that's a trade off that allows the immersion and roleplaying to be slightly better at the expense of options. Every way of doing this shit has a trade-off.

Because it is a roleplaying game and you are supposed to use your imagination. A noble character would not express his gratitude in a same way an uneducated beggar would. Yet two very different characters can still pick the same *Express your gratitude.* choice reasonably.

That's not the same thing at all, Divinity is giving you the gist of what you are saying but the exact dialogue/action isn't always concrete.
Fallout 4 is the opposite where you get 4 options that appear concrete but are actually all just yes with different tones.

I've also played boardgames for a long time and this is how we always plaid them. I even remember reading some RPG rulebook telling you specifically to act out your dialogue and not just say "I'm telling him that he's a bitch".

So are D:OS and 2 good? I'm looking for a nice RPG to sink some time into.
both are very good classic style CRPGs
I got bored of D:OS1 after few hours but D:OS2 is another story, i've already spent like 30h and still having tons of fun, and mind that i never really liked crpgs.
However balance is all over place, necromancer with spider summon and just 4 points to summoning are way stronger than maxed out ( summoning - 10) demon. Also shield + 1h sword/mace are kinda inferior to 2h weapon since enemies will rape your armor/magic armor and you will be left there with horrible low dps weapon. Who thought that was a good idea?
