Isn't that how you're supposed to hold the switch controllers? I don't own one yet so I haven't actually tried it, but I always assumed that was the intended way to hold them.
Now that I think about it, can games make use of both screens like the WiiU does? Like giving you a map or inventory on the controller?
Can't see the screen on the Switch when it's docked and being used on a TV.

You don't have to hold them separately, you can put them into the grip that forms a normal-ish controller with them. There's also the pro controller which is a normal controller. Finally, there's handheld mode which you have the entire Switch in your hand. Apparently, holding the joycons separately is the best way to play, because of the motion controls

The fact that you can hold the controllers however you like is comfy as fuck. Trust me, when I first saw them I thought it would feel weird as shit. But it really isn't, I fucking love the joycons.

No it doesn't work on two screens, because the entire hardware is inside of the tablet, so you have nothing on tv screen when you use it outside of the dock (which is basically only a charging station with an usb-to-hdmi converter and some extra usb ports)
You can hold the controllers like that in both tv mode or tabletop mode, or attach them to the grip with is also essentially just a well formed chunk of plastic to hold them together, there are no electronics inside
If you attach them to the console directly you use it in handheld mode, then it's a handheld console completely independent of the dock, unlike the wii u tablet which was only usable inside a certain range away from the console
You said the same thing about the WiiU tablet and that was literally the worst controller I ever used.

Depends on the game. In the case of Mario, it is more useful, because it allows for more of the moves. There are currently no ways to map the motion-specific movements to something else if it doesn't already have one. And honestly, it feels fine to do it.
Some moves require both, which means making sudden movements with either your controller or even your entire system. Others can be done by swiping with just the right or left joycon. For instance, after you throw the hat with Y (or by briefly shaking the right joycon), shaking the joycon another time will cause it to home in on the nearest target. Actually very useful move.
There's also a way to do an instant spin attack. You could do one by spinning the left stick 360 degrees, then waiting until Mario goes into his spin animation and hitting Y. But you could also just move both joycons to the right in a flicking motion and he'll do it instantly. This is something you can do with a controller configuration or even handheld mode, but it feels awkward that way due to having pieces between the two halves.

no, none of the moves require separate motion sensors. everything works as intended using the pro controller. handheld mode suffers though, since the moves require a flicking/shaking motion to activate, meaning you have to move the entire console, unless there's a way to do it that i haven't figured out yet.

This is really the best way to play. And they aren't connected by a cord like the Wii nunchuck was.
Can confirm OP pic is the best way to play this shit. I played the demo with the Joycons in the grip and it didn't feel anywhere as great to control as holding the Joycons separately
Not in Mario. You don't actually need any of the motion control-based moves to beat the game, but some of them are useful. While there are bullshit things like "shake to climb faster" that really don't seem necessary, there are some other moves like throwing the hat straight up in the air to hit flying or higher elevation targets, or rolling it along the ground like a bowling ball to hit things on lower elevations that are genuinely useful.
This is a big reason why it actually works this time. Plus they both feel like halves of controllers, instead of their own weird shit. Way less cumbersome. Also way more responsive, too. You just have to make a small flick to do most of those extra actions, but it also isn't too sensitive that you'll be throwing your hat every time you decide to shift your arm position.

Eh, I prefer the grip, the motion controls can be used with it just fine and it doesn't cramp each of my hands, the grip is just way better for me personally.

The pro controller has motion features built into it, too. It's just that some of the moves don't feel quite as natural with the bulk of a full controller.
I never said they were essential. Just useful. And motion controls still work in handheld mode. The joycons function exactly the same, you just have a tablet connecting them. So you can still do them, but it means shaking your entire system to do so.

I know playing BotW it feels more natural to aim the bow with just one hand (joycon) rather than both hands (controller). Is it similar to that?

There's no precision aiming, but doing the motion-based commands like flicking the right joycon after throwing the hat to do a homing attack, or waggling either joycon to fly faster as a paragoomba feels a lot better when you can freely move your hands independently of each other. There are moves that use both joycons at once, which means you can just move the whole thing as one big piece.
Question. Is there a full power off mode? Or is it always in sleep mode?
You can turn the power off entirely. I believe you have to go to the system settings, and there's a power option there. I almost never turn my system off, so I can't recall exactly where it is. You might be able to get to it by holding the power button, too.
There is, you just gotta get into the home menu and hold the power press (be it touch or button)
