Not a souls player at all so i looked at some beginners tips and they said to make a knight, which i did. But i was struggling
So i decided to try out thief instead and found it so much easier. Killed the half naked dude with the katana outside the hub and everything's going much smoother
My question is do knights get much stronger later on or is it just a playstyle thing? Because right now i'm inclined to stick with the thief
Well, the only other option is DS2 since i'm on ps4. I have BB but i'm not a fan of the setting

Knight is recommended for beginners because using a shield is generally easier for them than dodging is. DaS3 is much tougher on shield users because enemies are more aggressive than previous games, making it harder to play defensively with a shield.
If you're good at dodging you'll never need a shield except to parry.
Don't listen to this user, play the series in whatever order you want. Each game has their merits.

DaS3 is the easiest DaS because it's like a shitty action game where stats do not matter at all. Knight is fine because the starting armor is an endgame armor pretty much and the straight sword +10 is arguably the best moveset in the game too. But to be honest, in DaS3 no class or armor really matters, there's no poise and the resistances are proven to be almost placebos.
Should have gotten DaS1 or SotFS first.

Longsword is really good and you get a nice set of armor. But if you don't learn to drop your shield when not attacked to regenerate stamina faster, then don't bother using a shield.

Drop everything on health and shittons of stamina. Enemies do high damage and have no stamina for themselves and keep attacking until you're dead so you're gonna have to keep dodging until you're bored. Invest heavily on stamina and nimbleness; armor in this game is a joke and has serious diminishing returns and little pros.
All other stats are to artificially increment the """"depth""""" but in the end they do nothing if you're not a mage.

Once you get the timing on rolls down you can pretty much just walk through the game. DS3 makes roll spamming so good that i need to think up new ways to play to make it a challenge. Currently doing a use what you see run. Got stuck at the watchers for a bit because the faggot goats outside the boss room dropped a shitty spear that i had to use. Got them in the end though. Also, dont use the blood or milk ring when you get them. They sound good but unless youre doing pvp theyre pretty bad

This too. You can play DS3 without having played the first one, but its a lot better if you do #1 too. I'd also recommend playing DS2 at some point, but its not tied in to the other games very much, so while i think its worth playing, it wont increase your enjoyment of DS3 as much as playing the first one will

Parrying is only useful for PVP and some boss fights (Gundyr, for example), but you'll probably rarely use it
Don't listen to that sperg. On your first playthrough you should put stats wherever you feel is best. Min-maxxing and build optimizing comes later.
Also, as a note, you probably won't understand a single fuckin' thing happening in the game, especially since it fellatios Dark Souls 1 to the nth degree. I'd highly recommend you play the other DS games if you enjoy this one, however.

Also, make sure your first playthrough is totally blind and try not to summon at all. Granted, you probaley won't really understand the significance of some bosses since you haven't started with the first game, but still, blind playthrough.

40-50 dex is where you usually want to stop on NG to do good damage. Space out the points with hp and stamina though

It doesn't matter what you start as after the first couple levels because you can just allocate stats how you want and pick up armor that's just as good as what the knight starts out with. Also there's a good chance you were struggling just because it takes a bit to figure out the controls, camera, and general feel for the game. I died more in the first hour than I did during the next 10.
