No, she is specifically exaggerating each character's flaws to try and make them unattractive to the player. Yuri is strangely fascinated with 'dark' subjects, knives (and probably does cut herself to some extent), and does tend towards being slightly obsessive, but in the first playthrough these traits don't add up to much more than 'a bit weird' in practice.

It's only after Sayori's depression is cranked up to suicidal levels and she offs herself that Yuri starts going insane because Monika is trying to get the player to ditch her and go with the last sane person in the club (herself) instead.
