Then suddenly it exploded in popularity, and now you can't go anywhere without at least one person having heard about it.

The one before the food bar. It used to be fun to have hard monsters and not have to worry about tedious food, now you can not worry about food as much but you have easy monsters.

Minecraft is still as good as it ever was.
The core of it hasn't changed, and if anything going back to it for a few days every year I'm usually pleasently surprised by most changes.
The only real problem is that most new content is end game level, so it still always starts pretty slow. I've had the game for years and I've never actually gone to The End.

Beds are made with wool and wood, two things you could get immediately as you start the game. It got a bit harder to get wool when the animal farming was added, but still.
I really liked Notch's "obelisk" idea for changing the spawn

The did improve it a while ago, it's still annoying though. I wish they would just make you regen very slowly on your own and temporarily much faster after eating food. I see no downsides to that over the current system.

This. Terraria shits on mc in terms of underground content.
Sadly, terraria's ores aren't as useful to the game as a whole as minecraft's are. Any ore you can mine in mc is always useful to have, whereas in terraria, once you are in hardmode, you have pretty much 0 use for any of the normal ore spawn, and at endgame, you have 0 use for hardmode metals.
Terraria would do it better, except when you play on 4k you can always see light sources deep underground for whatever stupid reason.

I think, with them focusing on exploration as much as they do, they need to start making actual worthwhile loot. So many exploration rewards are just things you can make yourself easily.

and even then, that doesn't hinder my point, since minecraft does the same. you can build out of iron and diamond if you want. the latter will look absolutely tacky but it's an option, so it and terraria are on par there.

Of all the missed opportunities in Minecraft's development, I most wish that they had found away to keep mobs threatening to the player. That's the thing that grabbed everyone with survival mode: "You gotta survive the first night!"

See pic related? You can make world where this is the norm. Or you can make worlds of massive sky-touching spires. You can make worlds of huge but shallow ocean. You can even have that ocean be lava instead. You can even control ore spawn height and density, appearance of those shitty notch-ponds and so on.
Still, every biome is going to be similar,one forest will be similar to another, but it can be unique apart from normal worldgen.
I made a world like pic related in a modded playthrough, when i got some elytra and could glide all over, it was some of the best minecraft fun I had in a long time.
Notch's development blog should be archived for future generations as evidence of what large sums of money do to indie developers' work ethic.

You could make a Minecraft 2 that's actually a good game, make it something akin to Daggerfall but more functional. There hasn't been an actual real RPG or adventure game outside of Terraria are as far as clones go.
Migrating hordes, seasonal mob patterns, spawn pits, signs of coordinated intelligence attacking your home - all doable and all could have been great.
