JRPG protagonists are kids because youth is the last time Japanese people had any semblance of individuality. Once you graduate high school, you integrate into the well-oiled machine of Japanese society and forget that they ever had dreams or ambitions beyond "work for your superiors until you die."

I've never played Strange Journey or any SMT game other than the Persona games and the first five minutes of nocturne on an em (too choppy on my toaster), should I get the Redux as my first SMT game? Want to get 4 and 4A too

The common agreement is that you should start in Nocturne or 4. (4A is a direct sequel and spoils some plot points of 4)
First of all Persona != SMT
Second, you should give atelast a try to SMTIV and SMTIV final but if you really wanna try play DeSu and then wait for redux or play Nocturne->IV->IV: and wait for Redux
Large amounts JRPG released in the 6th gen going down had older protagonists. Fun fact though, dudes that aren't even 17 saving the world was started on the playstation 1. We've just lived long enough to see the natural conclusion.
IV would be the best starting point for SMT if you can't play nocturne. You can move on to IVA afterwards if you'd like but the story is much more tropey

4 is usually a good starting point for various reasons (easiest most of the time, QoL, similar settings to SMT1 and 2)
The start can be brutal though
It been awhile. It has to do with the Thread of Fate system where it helps your character do combos or something. Off combat, it show whats their relationship with one of the character in the team.
a good starting point would be 4A since it has all of the gameplay of 4A but better and with less pacing issues.

I would revommend starting with Nocturne because IV:A's gameplay would ruin the experience.
