I've never played pikmin. Is it just olimar watching the pepper people get obliterated by monsters or something? What's the appeal?

No, the monsters are enemies. The game is about finding items and bringing them back to your ship. Exploration is what these games are all about. That and trying to find the fastest way to get all of the ship parts/treasure/fruit.

How come the yellow ones feel much weaker than the pale ones?

He means the albino ones they have more HP and jump further than the Yellow ones.

yellow ones main advantage is that they can hope just as well on land. pale ones however are very weak when they're not in the water. that's how they are balanced

The contrast between the somewhat tense nature of pikmin games to make the absolute most of the time available while minimizing casualties and the laid back and serene atmosphere is fucking great
