The game in your post, Stranger of Sword City is pretty damn good. I'd also suggest Etrian Odyssey line and if you can stomach the massive amount of weebshit, Dungeon Travelers 2 on Vita is amazing.

First of all, stay the hell away from Stranger of Sword city since the game is a complete shitmess from start to finish. Supposedly, there was a new version that fixes the worst of the issues.
If you want something entry level: Operation Abyss is very gentle on beginners. MeiQ: Labrynth of Death has a few minor quirks but is otherwise enjoyable.
If you don't mind the grind: Dungeon Traveller's II is great. The Etrian Odyssey series is good as well.

Chalice Dungeons in Bloodborne are unironically the best dungeon crawler I've played, once you get to the depth 5 root chalices. The shit that game throws at you is insane.

You're right, I missed that one. Dungeons and bosses in that game could be uneven at points. It's also possible to break the game in comical ways like dual weilding two handed weapons with the right attributes.

Elminage gothic is the closest thing to authentic wizardry japs have managed for better and worse, stuff like sword city and EO are very watered down
desu I'd still recommend wizardry 8 it might be like 17 years old at this point but it's still the most modern rpg in my eyes
