This isn't actually a problem when the devs design the game around higher difficulty levels.
Halo, for example, is balanced around Heroic, which makes Normal and Easy both acceptable entrypoints for people who lack the skill to play the game on the harder difficulties. Meanwhile, Legendary is appropriately difficult for skilled players, and usually incentivizes co-op play.

The trick is that the game is balanced by not just the damage values of different weapons and enemies, but also by level design changes and alterations to enemy behavior patterns (Legendary Elites will avoid Plasma Grenades like Neo dodging bullets in the Matrix, forcing you to deal with their high shields and powerful weapons head-on). The unlockable Skulls add an extra level of difficulty adjustment, both up and down the spectrum. The game allows the player to decide what degree of infinite shielding, grenade-spamming, forced-level restarting bullshit they want to put up with.

Dunkey's unspoken assumption is that there is a Dunkey skill line. Everyone below is not experiencing video games correctly and games shouldn't have difficulty designed for people above it.

I mean, I agree with his opinion that having one difficulty adds a certain legitimacy to the game. I like that feeling. But he even addresses the 'git gud' problem at the beginning of the video and immediately proceeds to say spelunkey is 2hard. Those games are always as much about knowledge as they are about mechanical difficulty and I sincerely doubt he cared enough about spelunkey to give it the time needed. The same is true of league of legends, but he's just memeing on them.
