How did this game work online? It seems like having the balance change with every game world you went to would cause fragmentation, which is part of what killed the UT series. You might make a mage on a server only to find that mages have been severely nerfed, or that could happen with any class. The spells might be drastically different, or there might be +20 overpowered items.

Depends on the module, but I'd say most don't require a DM.
As for things you must know, if you don't use the Enhanced Edition you should use the client extender. You have to wait 30 seconds for the master server query to time out every time you go to play otherwise.

Characters were server-specific, if you're talking about persistent worlds. As for normal modules, most modules suggested a level range and rarely changed the stats of the classes.

The premium modules for starters. And there's Darkness over Daggerford which was supposed to be an official expansion/module but than EA buyout happened and the devs were given the middle finger, but instead of dropping it they just finished developing it with their own money and released it for free. It's very BG-ish and extremely well made, as expected of a product that was supposed to be official. Those same guys later went on to make the Mysteries of Westgate expansion for NWN2.

Infinite Dungeons is a roguelike, as in random generated maps for infinite grind. Wyvern and Pirates are worth playing, as are the premium modules from Diamond Edition release. Darkness over Daggerfond is still the best one though.

I could never get into the RP servers due to blatant favouritism and nepotism cancer going on, every single fucking time. Also the fact you couldn't just grind exp in your free time was utter horseshit. What's worse, many of them didn't even have random mob spawns and those that did, had no loot so making money was impossible. Overall my experience with all those RP servers has been as cancerous as I'd expected going in.

It's called powertripping and faggotry. All those RP servers are basically very bad RP, the kind that has super shitty DM that cannot do his job properly, which is why they're all cancer. Heck, good DMs are extremely rare in general IRL in PnP. Which is why I don't ever bother with RP, it's factually 99% terrible.

It WAS great. There were a lot of servers dedicated to PVP. There were even servers that did alternate modes like CTF. There's so many classes, feats, skills, and spells that people were always trying to figure out how to optimize builds.

There used to be some really fun RP servers around, that put in a lot of work to run a good game. Some even required you to apply to play on them beforehand, to keep shitters out. Good times though, but even on the best servers cliques form and drama occurs. Not sure why, it always seems to happen with RPers.
Still, 90% of the RP servers were pretty shit. If you wanted the good ones you had to put some effort into it, the ones with harsher character restrictions and GMs enforcing strict RP rules. Used to play on one where XP was super-rare, couldn't get any from killing monsters, but from GM handouts during events, or from RP. Most people would be level 1-3, a level 5 character was pretty boss and had been around a lot. It's been so many years now, but I think the place used to be called Haze or somesuch.
