All 3 games were marketed heavily by approaching streamers and getting them to generate hype for undisclosed sums of money in order to start a cascading effect.
These are known as "stream bait" games.

You know that in order to be "ruined" something must have been good previously, right?
Nobody needs to offer streamers money. After a few hits like Amnesia and FNAF, youtube facecamers started rooting around for games to attract their audeince and, wowie zowie, games with interesting stories that could be picked apart lead to more views.
They were all indie games that managed to become bigger and more popular than most AAA shit today.
DDLC has an impressive amount of autism for how recent it is, but it's still not greater than something like the Sonic fandom

I think timing is a big factor. When Undertale was released, a game of that style hadn't come along in years. So even though it was mediocre, there was a big demand for something like that, and people wanted to like it.
Put all the puzzle pieces together. The timing, desperation for a game like that, and the tendency for people to believe whatever they want to believe.

Without thinking about how the fanbases ruined these, here are my thoughts of each of them.
Undertale is probably the most game-y of the 3 games, since you can actually die and restart at a save point and is also an RPG. It's a bit linear for my taste and the humour isn't my cup of tea, but the first playthrough without spoilers is a decent time.
Five Nights at Freddy's is kind of like one of those FMV games on SEGA CD or Panasonic 3DO. There isn't much game to be seen other than making sure you preserve a good amount of energy and not getting jump scared. It was a bit boring after 3 nights, and the fanbase mainly exists for the some what of a lore Scott has built up.
Doki Doki is a tad bit short for my liking. Props to it being free though. I feel as though it would have been better if they removed the warning at the start, even if Tumblr babies would start complaining about it. It ruins the surprise because you know what is coming. Other than that the writing is alright, the art is fine and it's mostly decent at best for what it is.

Except FNAF was a solid and original horror idea for a game, it wasn't shit until Scott started milking it, Undertale also had a couple of original ideas, interesting mix of different genres and somewhat cool moments, it wasn't something really amazing but it definitely was a fun game and well worth the cheap price, the only bad things I can think of were few cringy jokes but I don't think it was so bad, luckily the dev didn't start milking it and the game itself is still fine with only the shitty fanbase preventing you from engaging in any sort of discussion about it anywhere.
Haven't played Doki Doki so I dunno about it.
The warning isn't there to keep people from complaining. Its there to keep Dan from being killed in a courtroom by some autists parents if they decided to kill themselves after playing it.

The game itself is pretty charming and the combat was pretty novel. So it was a pretty good indie game that already came with an insufferable fan base.

All three are designed around being an experience first and a game second, to easily be packaged into a youtube format. When you've seen it once, you've seen it all, so secondaries watching streamers/youtubers aren't missing out on anything.

All three games succeeded because of memorable character designs and being more easily accessible than other similar games (i.e. being sold openly on Steam as opposed to VNs you have to download from shady japanese links on obscure anime forums)
Recipe of success: make a game with a memorable cast of waifus and memesters that directly interact with the player and rake in that waifufag and lonely tumblr landwhale cash.
