You can change your difficulty yourself in Dark Souls by grinding enough or by calling for help. Similar to how you can use an overpowered character or do co-op in Tropical Freeze

MK8D just gives you all the DLC from the Wii U version and a battle mode. Pokken just added the content that was already present in the arcade version. Hyrule Warriors combines the 3DS and Wii U versions into one.
You can still play Mario Kart 8 on the Wii U. It isn't suddenly unplayable because of MK8D.
You can still play Pokken on the Wii U. It didn't suddenly stop existing because of the Switch port.
You can still play Hyrule Warriors. Both the 3DS and Wii U games are still there.

Keep in mind most of these WiiU games outside of a select few made their money back entirely. Bayonetta 2 ran out of physical copies before any price drops (literally 10% of the WiiU owners had Bayo 2 at the time of launch), and pretty much every good title besides Wooly World sold above expectations. Any extra Nintendo is making on these WiiU ports coming to switch isn't making back losses, it's just gravy for them.
