The creator of One Punch Man created him with the intent to create a character capable of killing anything in one punch. If Saitama felt it was necessary within the series he could with absolute certainly destroy the universe with a singe punch. That's what his entire character is based around, being comically overpowered to the point where nothing could ever truly match him in strength. Thanos has not only been shown to be a pushover without the IG, but has also been shown to still be capable of getting his ass kicked/tricked into losing it. Thanos is a joke even with this supposed infinite power.
