Literally (literally) stay on his sides and under his jaw. He can't bite you, his only options then get reduced to backing up for flame breath or doing a very wide tail whip, both of which are resolved by rolling into the monster. He also can't pounce you, and his most dangerous headbutt will only hit you once, rather than three times.

I really don't understand what people mean when they say "clunky" anymore. You faggots can see on numerous streams and youtube videos that people are capable of dancing through and around enemy attacks, wailing on monsters from all angles, and crushing things dramatically faster than Anja. Yet when you shitters get your hands on the controller, it's suddenly IMPOSSIBLE to play and every person who managed to defeat the monsters you found yourself incapable of defeating are either liars or deluded drones.
What makes you people think this way?
Protip: The hunters are overpowered in this game with all the shit they have at their disposal, while the monsters are severely under powered in terms of activity and temperament

This was my first monster hunter and I crushed Anja with dual blades solo on my first try just by repeatedly using the spinning slash to get behind his claws and jumping on him whenever the opportunity presented itself.

This shit honestly pisses me off.
I have killed Rathalos tons of times before he ever showed up in the campaign. I've even crafted most of his armor. What reason does the game have to not give me some Rathalos investigations? I've long since proven that I am able to beat the guy several times now, what's the big deal? Same with that ice dragon.
This wouldn't be that much of a problem if the main campaign wasn't a slog to tear through. But unfortunately it is. And even AFTER I've encountered a monster in the main story they game still feels the need to dripfeed me the investigations one bit at a time based on an arbitrary amount of things I am picking up.
The combat of this game is fantastic and tracking down and fighting monsters is great but the general design of everything is doing its very best to keep me away from playing.
Let me tell you, I also had that mentality about Monster Hunter having clunky combat. I decided to stick with it though because I figured that the game must be popular for a reason and that I'm doing something wrong. Eventually something clicks and you start weaving through monster attacks and discovering opportune moments of attack. Anjanath may move around a lot, but you just gotta get those bits of damage in each time he stops. You'll learn to use all the tools at your disposal to stop him from moving, or at least slow him down.
There is something you are missing and my best advice would be to just keep playing. You have to realize that Monster Hunter is a very methodical game. It's not like an action game where you can spam attacks and be generally safe doing that. Each button press needs to be thought about. It's extremely rewarding once you figure that out, but I agree that the game is just as frustrating.
OP isn't anywhere near as attractive or fun as those TV personalities are.

Having put over 100 hours into the game, I am convinced Anjanath is just a shitty fight. Most everyone else has more compact anatomy that lets you see what's coming next easier even when attacking. Anja's long face, angled torso, and tail that's just out of reach turn him into a huge chore even when compared to tougher monsters.

I always bow Anja or use GS. I do kind of feel like he moves too much. But it's nowhere near as bad as both diablos.

He is a pretty standard fight for me, out of 9 fights against him I was only carted twice on the first or second fight thanks to a filthy tobi kadashi, the only fight against him that was truly hard was when I fought him yesterday to test my controller, analog stops working at randon so I got hit more than usual. I think the "bullshit monster" is really relative to your playstyle, I can't fucking stand Rathalos but love fighting Anja, Odo and Diablos.
Bring a gun, if you haven't the materials to even make a fully upgraded ore gun: try blind luck. Kirin's lightning bolts strike in a 6 foot radius around it seemingly at random and when it buffs itself your attacks will bounce off all but it's head, making melee very unappealing for that encounter.
Azure Rathalos and generally some of the later Monsters are this but 4 times worse. They somehow made 4u look good in that regard.

Hit and run tactics. Go for draw attacks, maybe a follow up hit if your weapon is fast enough, then sheathe and back off. Critical draw and quick sheath are obviously desirable skills for this.

I can't stress this enough. I'm a hammer main and my buddy is a gunlance main. When we went up against kirin he had an extremely rough time of it, carted twice in the first few minutes, several close calls afterward. Meanwhile I had absolutely no trouble and hardly got hit.
Then we got to diablos and it just absolutely pushed my shit in, while he blocked basically everything and was always poised to shell its asshole.

He's a pain in the ass, yeah. Most of his moves have these long, drawn out animations where he's just covering crazy ass distances. It's a pain in the ass to have to constantly sheath just to be able to keep up with him.
The hitbox on his upward stream of breath is complete bullshit, but everything else isn't all that bad.

I'm in the process of building a blast attack dual blade set with the Bazelgeuse blades. I'm doing a lot more damage than what I was doing with a typical weakness exploit dual blades build, but the weapons have the shittiest sharpness so I have to stop and sharpen every 30 seconds.

Anja is one of the first skill checks in the game. Key is to know when he's enraged and use the special slinger ammo he drops since he retreats more often than other monsters. Also if you're willing to smash his legs for a bit and break them, they become a weak spot. This will be a nice safe spot to whale on him but you waste some time doing shitty damage to get it.

It's a bait term with a totally mysterious definition. No one knows the person's skill level or threshold for supposed "clunkiness", nor what specific facet of combat they measure on a scale of clunky. It really took over when people started trolling the shit out of witcher fans with it. The combat for that game isn't really clunky as much as it is shallow because the most optimal way to survive encounters becomes obvious early on.
