It probably has the best interaction with the open world, and traversing them is pretty fun
the game has pretty lackluster NPC interaction and side quests though

If you go into it expecting much more than parkour and zombie killing you'll be disappointed, but it does those things really well in big maps
BotW feels -to me- like it made exploring the world fun for its own sake, even if the rewards are lackluster.

Do old skool (and old skool style) JRPGs really count as open world games?
Zelda 1 definitely is though.
BotW is basically taking the best ideas from every other open world game (including Zelda 1) and putting them into one game. No one should say its revolutionary. But it is one of the better open world games because it is a compilation of so many of them.
That being said, the extremely experimental and repetitive music makes it so I can't play the game for more than a few hours at a time. And I'm someone who played other open world games like RDR for 12+ hours a day. BotW has proven that music is pretty important in a game with free roaming.
Minecraft's base concept is what open world is supposed to be like for me, even though everything else, besides the seed-generated voxel world, sucks pretty much. You could take MC and add a terrain smoother to it then increase the vertical world scale by 8 times, it would make a pretty neat voxel game (of course trees and other objects like those would need to be adapted as well), then implement a dynamic shadow/light renderer that doesn't suck ass. Don't tell me you wouldn't give it a try.
If it weren't made in shitty java, I'm sure everyone would be using mods that can do this in MC but sadly as it is now it would just vaporize your hardware.

They do count as open world. But not all open world games count as free roaming. People seem to confuse both together. Probably because even in free roaming games, there's some restrictions. For example, you can't just ride into Mexico in RDR or get on the ship in Dragon Quest VIII until you do certain story events. But they're still free roaming games because they let you find the events on your own and do the events at your own pace.
I assume your second point will be explaining why it's not? Oh wait...
