Anyway OP. MATE is the way to go. I have MATE 16.04 on my laptop and desktop and it works great.

Ubuntu 16.04 is very fast. I would suggest using Ubuntu now (instead of its derivatives) unless you have a strong opinion of Unity, which would be odd.

Well unity is more resource intensive, less customizable, more bloated, and less feature filled than literally every other DE, so in fact it'd be really weird to not have a disdain for it

How does Ubuntu (Unity) 16.04 compare to 14.04 in terms of performance?

I tried installing 16.04 but had to go for 14.04 due to problems during installation, and I have freezes when I try to copy something via USB 3.0 interface and do something else at the same time.

I need it to be Unity due to being the only one allowing me to do HDMI output out of the box as my display is broken and I can't see anything in the left side.
Tried LXDE and Xfce but neither duplicated the bar on the second screen.

I'm guessing MATE has the same issues, does it?
