Ubuntu and derivatives are well crafted for begineers, try always with the latest LTS but the previous LTS at this moment should already be very solid too.

For me the fonts looks fine but if there's something you don't like you can try to tweak it:

You can try to install install the infinallity patches but i don't know if there's already packaged for the 16.04.

You can customize very well most DEs, maybe the only one that limits you on purpose is unity and you can still install unity tweak tool from the repos to change a good number of things.
Try with cinnamon, mate or xfce. Try with the arc theme and the numix circle icons, the noto or the droid sans are good fonts for UI.

I'm not sure what are you referring to but pulseaudio works ootb for me and it generally comes installed. If you work with DAW you may want to use something like jack. Good DAWs are bitwig, renoise and maybe LLMS.

Arch for new packages, try out several DEs and WMs.
