CPU strength is important because I plan to use CEMU, Citra, RPCS3, and Xenia.

Get a 6800K and a cheap X99 board.

Single core performance is very important for emulation, Zen is supposed to be Skylake core tier, a tier below my current.

Overclock the shit out of your 3570K.

Even my 6700K lags at certain choke points that occurred with my 2500K when emulating games.

The 3570k is perfectly fine. You wouldn't be happy with an upgrade. I say wait until 10nm is the standard.

My 3570k is actually a bad batch, it hits 70c when stress testing at stock(turbo boost)

Same. Mine pretty much refuses to go past 4.3GHz at nearly 1.3V. It gets fairly hot at that temperature, nearly 90C. I've thought about delidding it, but it's really not worth it I don't think. I didn't even want the K, but I got a bundle deal.

I still use Westmere-EPs and will for the foreseeable future. I even have a T7300 laptop that performs great for day to day tasks. I've had it about 9 years, now.

Yea man, even old CPUs are still doing good. I think maybe 2 or 3 more years before we need to start upgrading CPUs.
