Sniff traffic using WireShark or something to look at the sites they visit. Or do some social engineering and send an email containing malicious software with Metasploit so you can put a keylogger and steal emails/passwords. But to do that I would do some reconnaissance to figure out their OS so you can find vulnerabilities so that their anti-virus doesn't detect it. Have fun.
