Not everything -- as in the pic shown, if you leave the setting on, it will send the search term to apple, much as the way google does in chrome. This is simple to turn off (check box in settings).
Unlike windows, which will turn those settings back on and resume data collection. Apple doesn't collect everything you type or say, like Microsoft tells you it will in its privacy statement.
