Did you mount your EFI partition to /boot or /boot/EFI?
(/mnt/boot or /mnt/boot/EFI before chrooting)
You need to do this, ideally before generating your fstab

why would anybody use uefi

I mounted it to /boot but every GRUB2 guide outside of the handbook says /boot/efi

I know for Arch, the wiki recommends just /boot, while noting that other distributions might require /boot/EFI instead

Since your installation media didn't have EFIVARS compiled in grub didn't add itself to your UEFI boot menu.

tldr install via systemrescuecd instead.

I've always wondered what the desire to use distros like gentoo or arch. Neither Torvalds or Stallman use a linux distro with a minimalist installer/system. Torvalds has been known to use fedora and Stallman has stated he uses Trisquel. Both easily installed and ready to use after install.

So why are you wasting your days away on nonproductive distros?

OP here. Using SystemRescue CD worked (turns out the problem came from the minimal install CD). Still, until >2 TB HDDs become mainstream, all EFI would have done will have been adding unnecessary obstacles.

If you have a BIOS, stick to MBR if you want to dual-boot with Windows. If you have a UEFI, use GPT.

Just install Ubuntu or some distro that makes partitions for you, or boot in CMS mode and skip UEFI all together.
