They're very close, we're talking a couple of seconds maybe.
I tested all 3 on an old PC and boot times varied a bit, but generally 10 was the slowest and 7 and 8.1 were pretty much the same.
It's just "Aero" with a different theme. Technically it's called DWM or "desktop composition" as it's called in 7 settings.
