What protocols? I know of one alternative, XMPP. IRC is simpler though.

Depends on what client you use. If you're actually using a good client, you'll be able to have these features. Get something like WeeChat.

You can if you run irssi or weechat in tmux on a dedicated server. Even a $30 Raspberry Pi will do.
