I would be far more interested in an entire OS written in C#.
Systems libraries for interacting with the OS would no longer be buried in a tangling web of C libraries with inconsistent naming and behavior (ala WinAPI) - they would be clean, consistent, and object-oriented.

Writing in a managed language also has its own benefits.
