Download "Package Disabler" and a Google Launcher and you pretty much have the stock android experience.

Not true at all. As soon as you swipe down you'll experience the touchjizz bloat. Go into the ugly settings app and you'll see Samsung's dirty fingerprints on pretty much everything.

S8 would have to be an amazing phone for me to consider it. I'd rather have a phone with worse specs but less bloated UI. You're less likely to get lag if you avoid touchwiz.
The jump from QC 2.0 to 4.0 is tempting, as is the new chipset.

I'll stick with my S7, it's bezel is fine, the 820 is still fine, and QC 2.0 isn't that bad.

touchwiz was bad in the past but now it's really nice. Samsung is not that big on custom roms because every non touchviz rom drains battery faster than the stock rom. Running a samsung on a custom rom is not really recommended.

Samsung always offered the best Android devices, no Sup Forums meme can change that, TouchWiz is now one of the best launchers and if you don't want it it's a fucking android phone you can change everything you don't want.
When it comes to pure hardware quality Samsung is the way to go.
The only other phone I would consider at the moment is the HTC 10.
if s8 has a big battery like the s7, battery drain is not that much of a problem, it will still get you through the day
