conversations.im is free for 6 months then it's 8e/yr (which isn't a lot) but I want to explore other options.
Host your own. If not have look at the beginning of this article. It talks about some of the considerations: homebrewserver.club
Creep.im if you want to have all XEPs.
Would a RaspPi be enough?
Also, I'm concerned about uptime so I'd probably host the server on a VPS. Is that a good idea?

It seems to be the only server made by an individual that has all the XEPs. Those from places like Netherlands or Iceland have almost nothing.
If you are going to use XMPP on your computer and you don't need cell phone optimizations, here are some of the more "reliable" countries.
Raspi is enough for you and a few others. Uptime will most likely be okay unless you know you have a particularly bad connection.
Can confirm that, hosted a XMPP server (ejabberd) on an odroid-U3 for a couple of years.
