XFCE does exactly what you need a GUI to do, without all the extraneous flashy crap of Gnome, Unity, and (shudder) KDE.

Learning linux is retarded anyways, learning to administer a single user computer means nothing to actually administering a multi-user system.
Although familiarity with grep/awk/perl, man paging, iptables, et cetera are useful.
The most useful thing is to constantly be learning new stuff.
