I used to think that before i started visiting Japan but the baseline for food is very high there and I think Japanese food very much deserves its reputation for precision and care, I think its one of the hardest countries to have an actual bad meal in.
In terms of influence Japanese food is now famous from low end to haute cuisine and it is only in same league as France for high end eateries.
Its a good "pleb filter" cuisine because the food relies on good ingredients and skilled chefs rather than an overload of "tasty flavours". I think this is a concept that all top cuisines have especially Italian.
Nah I think both have the same love and quality of food but when you elevate this to "food influence" France is higher and this is even clearer if you look at a recipe book or the restaurant industry. For many being a trained chef is basically just being taught the French way.

There's more than just the taste of food desu.
People don't come from all over the world to France simply to learn how to cook or serve food.
There's a whole thing around the food that's hard to find elsewhere in the world, otherwise, if it's just about recipes everybody would "get on our level".
And all over the world, they actually are on our level, when you go to fancy restaurants/hotels in big cities, well it's all perfect, and yet, a large majority of people seem to prefer France, and its French food.
Same can be said about wine, I've tasted very very great wines from surprising countries like China or Turkey, no kidding, it's as good as ours (it would easily be 5 times more expensive it had an AOC).
We make the difference in all the rest. We have this culture, this way of presenting/doing things. French are excellent, without any competitor, when it's about associating wine with the right food, etc.
When you have all of that, the rest is simply a make-believe. People will automatically be biased, or it will have some sort of placebo effect.

I do a lot of traveling with work and in my own time.
I've had some decent meals in rural Spain but by and large I've not enjoyed it. It's far too oily and greasy, their restaurants are often dirty and they don't do anything particularly well.
